The build at a glance

What we did

Nearly everything made of wood in this restaurant came out of our San Antonio shop. Doors, booth seating, wait stations, the check-in station, tabletops, even the metal table legs from our metal shop. Panels were stained in the shop, then sized and trimmed in the field. All of it in plain sawn and rift sawn white oak. This was a design build project, which means the plans were a starting point, not a finish line. Our Special Projects Manager, Doug, ran it from CAD drawings through install, adjusting the work as the owners refined their vision room by room.
Most shops build what’s on the plans. We build what the owner decides on Tuesday.”

The Challenges

Design build work rewards flexibility. The signature circular booths were redesigned several times as the owners dialed in exactly what they wanted, and Doug personally redrew each version and sent the parts to the shop floor. On a project like this there is no install manager to hand off to. By the time installation starts, nobody knows the work better than the person who designed it, so Doug ran the install himself. That is why the role exists. Complex, one-off projects get one person accountable from first drawing to final walkthrough.
